Crispy Black Bean Tacos with Feta and Cabbage Slaw

* 1 15-ounce can black beans, drained
* 1/2 teaspoon ground cumin
* 5 teaspoons olive oil, divided
* 1 tablespoon fresh lime juice
* 2 cups coleslaw mix
* 2 green onions, chopped
* 1/3 cup chopped fresh cilantro
* 4 white or yellow corn tortillas
* 1/3 cup crumbled feta cheese
* Bottled chipotle hot sauce or other hot sauce

* 2 teaspoons active dry yeast (from a 1/4-ounce package)
* 1 teaspoon mild honey or sugar
* 2/3 cup warm milk (105–115°F), divided
* 2 1/2 cups all-purpose flour plus 2 tablespoon for sprinkling

* 1/2 cup butter, cut into pieces
* 1/4 teaspoon salt
* 1-1/2 cups all-purpose flour
* 5 eggs
* 1-1/2 cups shredded Gruyere cheese (6 ounces)
* 4 teaspoons Dijon-style mustard

Tomato, red onion, and basil bruschetta

2 cups assorted cherry, grape, and teardrop tomatoes, halved
(or quartered if large)
1/2 small red onion, finely chopped
3 tablespoons olive oil plus additional for brushing
3 tablespoons chopped fresh basil
1 1/2 tablespoons balsamic vinegar 1 large loaf focaccia, halved horizontally (reserve half for another use)
1 garlic clove, peeled, halved

15-Minute Marinated Chicken

  • 1/4 cup Dijon mustard
  • 2 tablespoons fresh lemon juice
  • 1 1/2 teaspoons Worcestershire sauce
  • 1/2 teaspoon dried tarragon
  • 1/4 teaspoon pepper
  • 4 boneless, skinless chicken breast halves

Mango blueberry “fool”

1 (1-lb) ripe mango, pitted, peeled, and cut into chunks
1/4 cup sugar, or to taste
2 Tbsp fresh lime juice, or to taste
1 cup chilled heavy cream
1 1/2 cups blueberries (1/2 lb)
Grated lime zest to taste

Purée mango, sugar, lime juice, and a pinch of salt in a blender until very smooth. Add cream and blend until very thick. Blend in additional lime juice and sugar to taste.

Transfer to a bowl and fold in most of blueberries, then divide among 6 glasses. Top with remaining blueberries and zest. If desired, chill, loosely covered, 30 minutes.
